Quinoa Stuffed Bell Peppers

Hope you're all having a great start to your week! Seth is home for two weeks, so I have picked out a few new recipes to try while he's home. First up, is Quinoa Stuffed Bell Peppers. I found the recipe on pinterest from THIS blog.

What you'll need:
  • 3 cups cooked quinoa
  • 1 (4-ounce) can green chiles
  • 1 cup corn kernels
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup petite diced tomatoes
  • 1/2 cup shredded pepper jack cheese
  • 1/4 cup crumbled feta cheese
  • 3 tablespoons chopped fresh cilantro leaves
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder, or more to taste
  • Kosher salt and freshly ground black pepper, to taste
  • 6 bell peppers, tops cut, stemmed and seeded

1. Preheat oven to 350 degrees F. Line a 9×13 baking dish with parchment paper.
2. In a large bowl, combine quinoa, green chiles, corn, beans, tomatoes, cheeses, cilantro, cumin, garlic, onion and chili powder, salt and pepper, to taste.
3. Spoon the filling into each bell pepper cavity. Placed on prepared baking dish, cavity side up, and bake until the peppers are tender and the filing is heated through (about 25-30 minutes)
4. Serve immediately.

This recipe was so easy & good. I would have added a bit more salt & pepper to mine next time & I think I'm going to add some cut up avocado to put on top!

My weekend wrap-up consisted of the following:

Hanging with these two cuties on Friday night & sharing pizza.
Saturday morning I met up with Run 4 Others & got in 8 miles!
Then it was time for a much needed massage at Franklin Massage. They give the BEST runners massages! My right glute hated me during this, but was much happier afterward!
The next morning we met up at Margot's for Corrie's birthday brunch. It was so delicious and this picture just oozes summertime!!! I love sundress weather!

6 am yoga at Shakti!
6 pm strength at Krank (I felt like after my weekend of junk food I need a double workout). Strength class with Blake was great and tough, lots of slow weights, TRX, and push-ups!
Then I had a free smoothie from Juice Bar (after 10 purchases, you get 1 free), so I got the Cocoa Banana!
Track Tuesday! I'm still nursing some injuries and they've said no speedwork or long runs for a few weeks, so I did a few laps around the track and took some breaks while watching my friends run Yasso 800s!
Then it was off to the Jack Daniel's distillery tour for work! The tour takes about 1.5 hours and takes you all around the facility. This is a statue that was replicated to look like Jack. In real life, he was very short and wore a size 4 shoe (yes, size 4). When they made this statue, they had to make his feet bigger than a size 4 otherwise the statue would have fallen over!
 Lots of bottles of single barrel label! You can purchase a barrel anywhere from $8,000 - $12,000. They have plaques for each of their barrel owners and it ranged from celebrities to stores, to regular people (obviously rich ones!).
 Afterward, we did a whiskey tasting of the 5 Jack Daniel's bottles. I preferred the Honey and Fire ones. The Honey was very sweet (you could put it on pancakes) & the fire was similar to the taste of Fireball!
 Afterward we headed over to Miss Mary Bobo's for lunch. They only seat people at 11 am, 1 pm, & 3 pm and someone that works at the restaurant sits with you and gives you all the history of the house. It's family style southern cooking and we had fried chicken, fried okra, bbq, mac n cheese, cornbread, corn, beans, and apples, followed up by chess pie. I was so full & it was AMAZING! You need reservations far in advance for this place, it's very limited seating!
 Afterward, we walked around the little town and outside of one of the stores, it's legend that when you sit across from this guy playing checkers, he tells you a story. He told me to go home and nap because I was in a severe food coma!

It was the 2 year anniversary / birthday of the Brentwood Breakfast Club! I wasn't an original member, but I am so happy I found this group of people! I really struggled through this run due to the humidity and the fact I haven't been running that much, so there were a few walks during my run, but ended up a little over 5 miles!  
Our dear friend Jennifer who helped start this group and her husband Jason brought the group treats from Everything Bundt Cakes. These are life changing desserts and so delicious! Thank you to Jennifer & Jason!
And that was the week!!!

Hope you all are ready for a fun weekend!! We're heading to WV to go camping for a quick 2 days!

This week Oliver turned 9 months old & he got a summer haircut!!
Thursday began w/ the Brentwood Breakfast Club. I ran 4 miles at a 9:05 pace. I had to walk 2 hills during the run due to some achilles issues, but was still happy to run!
I got a pedicure with a friend after work, then made some brownies & banana muffins for our trip!

And now we are off on our road trip to WV!!!

Summer Salad Recipe!

Blueberry Feta Salad

I found this new summer salad recipe on Pinterest (Click Here for the recipe). Seth & I both really enjoyed this one & it's light, easy, & you can play around with it!!

Ingredients for Salad:

  • 6 c. mixed greens
  • 1 c. blueberries
  • 4 oz. crumbled feta cheese
  • ¼ c. almonds (I used almond slivers because that's all I had on hand)
  • red onion slivers, to taste

Ingredients for the Dressing (I did not use all of it on the salad):

  • ⅓ c. olive oil
  • ⅓ c. golden balsamic vinegar (I used white balsamic vinegar because I could not find gold?)
  • 1 Tbsp. lemon juice
  • 1 Tbsp. honey
  • 1 tsp. poppy seeds
  • ¼ tsp. pepper

  • Layer Salad Ingredients in Big Bowl
  • Prepare Dressing by combining all ingredients in a container with a lid. Shake well.
  • Toss Salad with dressing (use to your discretion depending on how much you like)

It's been awhile!!

It's been a crazy week of travel & sorry I haven't been able to post for awhile, but I am back now!

Last Thursday we celebrated Seth's 29th birthday at Sinema w/ an amazing dinner!
We started off with the Octopus & Lobster appetizers, we really enjoyed both! (the black stuff if squid ink)
Seth ordered the bone-in pork chop (they slice it for you) & I had the filet w/ corn & potato
 The next day it was off to Ohio for Memorial Day Weekend for family time & wedding planning. While I went to visit florists with my mom, Seth took a bike ride, hit Kroger, & came home with flowers for all the women (my mom, sister, my brother's girlfriend, & me). So sweet!
Then we hit the Greene in Beavercreek, OH to do some shopping at the outdoor mall. We grabbed a drink at The Pub w/ my siblings & headed home for dinner!
Then it was back to Nashville on Monday & Seth was off again Tuesday morning for work!

Now some random items:

1. I bought some new shoes from Fleet Feet Nashville. New Balance has a sale going on for 10% off $125 (try: BBQ16 or GRILL16). You can visit their website HERE to purchase these. They are super comfortable & feel very light on my feet. I also love the color! Great new summer shoe! New Balance is really coming up!
2. Sometimes Oliver sleeps on my head & of course I love it
3. I joined a large group of women on facebook to do a 30 day plank challenge for a 10 minute plank. I have a very weak core, so I'm hoping this will help me & that I can stick to it!
I was in Chicago for work this week & now we're off to Raleigh for Seth's triathlon on Sunday!
